After moving her family to New York, Rosa continued cooking and serving meals throughout her community.
By the 90's, Rosa and her children was not only serving nutritious meals offering a variety of services including childcare to low-income families, holiday catering, and baked goods. Rosa's cooking became so popular that local educators and professionals were eager to have a taste. She began delivering pies to teachers and administrator

She began delivering pies to teachers and administrators at schools which her children and grandchildren attended.
In 2006, Rosas Grandson Dante Batten embraced innovation by introducing unique dining solutions for various settings. With a focus on creating cost-effective solutions that meet the diverse needs of our clients. Collaborating to open and operate first time franchises in untapped markets including IHOP, Smashburger, Five Guys.

In 2015, Dante Batten (CEO) and Rosa's eldest daughter Shirley Batten (Vice President) partnered to form Utopia Culinary Management LLC to manage and operate a diverse food service and nutrition operation. With help from the family, they launched Rosa's Southern BBQ in Scranton, Pennsylvania. The restaurant was an instant hit and began catering in neighboring states to satisfy high demand.

After operating several school lunch food service contracts in Pennsylvania, Utopia expanded to New York with its first commercial contract at Reality House Inc., a veterans home and behavioral health facility. Utopia introduced a new logo and vowed to continue expansion of service excellence through food service accounts and restaurants abroad.

Dante Batten founded Utopia Culinary Management LLC in 2011, leading the company with the philosophy of “Superior Service.” With over 20 years of experience in the food service and restaurant industry, Dante launched Rosa’s Southern BBQ in downtown Scranton in 2016, creating a buzz that spread across several states. After successfully opening multiple locations, he partnered with Weinberg Food Bank, the PA Department of Education, and the NYC Department of Education to combat food scarcity in those areas. Through its network of clients and partners, Utopia now serves over 10,000 meals a day.
